Have you ever stumbled into your kitchen just to be greeted by one single over-ripe banana and wondered what on earth you were going to do about it? Well, then you are in the right place and this recipe is going to help you out. This delicious banana muffin recipe is also a must-try for all banana loaf lovers. I was inspired to share this recipe when someone commented on a TikTok where I made these, asking for the recipe and your wish is my command. So, without further ado, let's get baking
2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/2 cup butter, melted and cooled
2 large eggs, room temperature
1/2 teaspoon of vanilla extract
1 Over-ripe banana
brown sugar crumble
2 tablespoons brown sugar, optional
1 tablespoon of melted butter
Preheat the oven to 180°C. Grease muffin tin with butter/cooking spray and set aside.
In a small bowl, whisk the flour, sugar, baking powder, and salt together.
In a medium bowl, whisk the milk, butter, vanilla essence and eggs together until well combined.
Peel the banana and in a separate small bowl mash it with a fork.
Add the flour mixture and mashed banana and stir with a silicone spatula just until combined.
Divide the batter evenly between the muffin tin cups and sprinkle the tops with a mixture of the brown sugar and melted butter.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs attached.
Transfer muffins to a wire rack to cool.
